Garlic-Ginger Ground Beef with Charred Mushrooms and Lime

Ingredients

  • 1 poundground beef
  • 12 ouncesmushrooms
  • 4 clovesgarlic
  • 1 tablespoonginger
  • 3 tablespoonsoy sauce
  • 2lime
  • 2 tablespoonneutral oil
  • 4scallions
  • ¼ teaspoonred pepper flakes (optional, for heat)

Prep

    Mince or grate 1 tablespoon fresh ginger.

    Mince 4 garlic cloves.

  3. 03

    Halve or quarter 12 ounces mushrooms.

    Slice 4 scallions, separating white and green parts.

    Cut 2 limes in half for juicing.

Method

    Heat 1 tablespoon oil in a large skillet over medium-high heat. Add the ground beef, breaking it into small pieces as it cooks, until browned and no pink remains, 5–7 minutes. Drain excess fat if needed. Transfer beef to a plate.

    Add the remaining 1 tablespoon oil to the skillet. Add mushrooms in a single layer and let them sit undisturbed for 3–4 minutes to char. Stir and cook another 3–4 minutes until golden brown and tender. Season lightly with salt and pepper.

    Return the beef to the skillet. Add minced garlic and ginger, stirring constantly for 30 seconds until fragrant.

    Pour in soy sauce and juice from both limes. Toss everything together and cook for 1–2 minutes until the liquid clings to the beef and mushrooms.

    Taste and adjust seasoning with salt, pepper, or more lime juice. Top with sliced scallions and red pepper flakes if desired. Serve over steamed rice or with noodles.

Spice Tips

For warmth and complexity, add a pinch of cayenne or white pepper alongside the red pepper flakes. A splash of rice vinegar or fish sauce in place of some soy sauce deepens the savory finish. Fresh cilantro stirred in at the end adds brightness that complements the lime.

For extra umami depth, use a mix of cremini and oyster mushrooms. If you prefer less heat, omit the red pepper flakes entirely.
