Garlic Ground Beef with Sautéed Mushrooms and Peas

- 1 poundground beef
- 12 ouncemushrooms
- 4 clovesgarlic
- 1 cupfrozen peas
- 2 tablespoonolive oil
- ½ cuplow-sodium beef broth
- 1 wholefresh lemon

- 3 sprigsfresh thyme

Mince 4 cloves garlic.

Slice mushrooms into 1/4-inch pieces.

Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it into small pieces with a spoon, until no pink remains, about 5 minutes. Drain excess fat if needed. Season with salt and pepper, then transfer to a plate.

In the same skillet, heat remaining 1 tablespoon olive oil. Add mushrooms and cook, stirring occasionally, until golden and tender, about 5 minutes. Season with salt and pepper.

Return beef to the skillet. Add minced garlic and cook for 1 minute until fragrant.

Pour in beef broth and add thyme sprigs. Stir in frozen peas and simmer for 3 minutes until peas are heated through.

Remove thyme sprigs. Squeeze juice from lemon into the skillet, stir, and taste. Adjust seasoning with salt and pepper as needed. Serve immediately.
