Garlic Ground Beef with Sautéed Mushrooms and Peas

Ingredients

  • 1 poundground beef
  • 12 ouncemushrooms
  • 4 clovesgarlic
  • 1 cupfrozen peas
  • 2 tablespoonolive oil
  • ½ cuplow-sodium beef broth
  • 1 wholefresh lemon
  • ·salt
  • ·black pepper
  • 3 sprigsfresh thyme

    Mince 4 cloves garlic.

    Slice mushrooms into 1/4-inch pieces.

Method

    Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it into small pieces with a spoon, until no pink remains, about 5 minutes. Drain excess fat if needed. Season with salt and pepper, then transfer to a plate.

    In the same skillet, heat remaining 1 tablespoon olive oil. Add mushrooms and cook, stirring occasionally, until golden and tender, about 5 minutes. Season with salt and pepper.

    Return beef to the skillet. Add minced garlic and cook for 1 minute until fragrant.

    Pour in beef broth and add thyme sprigs. Stir in frozen peas and simmer for 3 minutes until peas are heated through.

    Remove thyme sprigs. Squeeze juice from lemon into the skillet, stir, and taste. Adjust seasoning with salt and pepper as needed. Serve immediately.

Spice Tips

For subtle warmth, add 1/4 teaspoon red pepper flakes when you add the garlic. A pinch of smoked paprika adds earthy depth. Fresh parsley or tarragon stirred in at the end brightens the finish.
