Ground Beef and Noodle Bowls with Lime and Herbs

Cut 2 limes in half for juicing.

Slice 4 scallions on the bias.

Slice 1 jalapeño into thin rings, removing seeds if you prefer less heat.

Method

Bring a large pot of salted water to a boil. Add egg noodles and cook according to package directions until tender. Drain and set aside.

Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a wooden spoon, until browned and cooked through, about 5 to 7 minutes. Drain excess fat if needed.

Add diced onion and minced garlic to the beef. Cook for 2 minutes, stirring, until softened and fragrant.

Stir in fish sauce, soy sauce, and 1/4 cup water. Simmer for 2 minutes to combine flavors.

Divide into bowls. Squeeze fresh lime juice over each bowl, then top with chopped cilantro, sliced scallion, and sliced jalapeño.
Spice Tips
For gentle heat, include the jalapeño sliced into rings. For more kick, mince it and mix into the sauce. A pinch of white pepper stirred into the beef adds subtle warmth without overwhelming the fresh lime and herb flavors.
Fish sauce adds authentic depth; if you don't have it, use an extra tablespoon of soy sauce. The noodles can be cooked ahead and reheated with the beef mixture. For extra freshness, serve at room temperature.
