Quick Beef and Tomato Skillet with Lime and Cilantro

- ·yellow onion
- ·garlic
- 14½ ouncecanned diced tomatoes
- ·lime
- ·cilantro
- 1 teaspooncumin
- ½ teaspoonchili powder

- ·black pepper
- 1 tablespoonolive oil

Dice 1 medium yellow onion.

Mince 2 cloves garlic.

Chop a handful of fresh cilantro.

Halve and juice 1 lime.
Method

Heat olive oil in a large skillet over medium-high heat.

Add ground beef and cook, breaking it up with a wooden spoon, until browned and no pink remains, about 5–7 minutes. Drain excess fat if needed.

Stir in diced onion and minced garlic. Cook for 2 minutes until fragrant.

Add cumin and chili powder, stirring to coat. Cook for 1 minute.

Pour in canned tomatoes with their juice. Bring to a simmer and cook uncovered for 8–10 minutes, stirring occasionally, until the sauce thickens slightly.

Squeeze lime juice into the skillet and stir. Season with salt and pepper to taste.

Top with chopped cilantro and serve over rice, with tortillas, or as is with a side of greens.
Spice Tips
For extra heat, add a pinch of cayenne pepper or a diced jalapeño when you cook the onions. A splash of hot sauce swirled in at the end adds depth and kick without changing the bright profile.
