Cilantro-Lime Ground Chicken Tacos with Charred Onions
Ingredients

- ·yellow onion
- ·lime
- ·cilantro
- ·garlic
- ·olive oil
- ·cumin
- ·salt

- 8corn tortillas
- ·jalapeño
- ·radish
- ·cotija cheese (crumbly, optional)
Prep

Dice 1 medium yellow onion.

Mince 2 cloves garlic.

Cut 1 jalapeño into thin slices (remove seeds if you prefer less heat).

Thinly slice 3–4 radishes.

Roughly chop a handful of fresh cilantro.
Method

Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the diced onion and cook, stirring occasionally, for 5–6 minutes until charred at the edges and softened.

Push the onion to the side of the skillet and add the ground chicken. Break it up with a wooden spoon and cook for 4–5 minutes, stirring occasionally, until mostly cooked through and browned.

Add the minced garlic and cook for 30 seconds until fragrant.

Stir in 1 teaspoon cumin, the juice of 1 lime, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Toss everything together and cook for 1 minute more. Taste and adjust seasoning.

Warm the tortillas in a dry skillet or over a gas flame for about 15 seconds per side, or wrap them in a damp kitchen towel and microwave for 30 seconds.

Fill each tortilla with a spoonful of the chicken mixture, then top with sliced radish, jalapeño, cilantro, and cotija if using. Serve with lime wedges.
Spice Tips
For extra warmth, add 1/4 teaspoon smoked paprika with the cumin. For heat, add a pinch of cayenne pepper or use jalapeño slices in the filling itself. A squeeze of hot sauce on top adds brightness and kick.
