Citrus-Ginger Ground Chicken with Scallions
Ingredients
- 1½ poundsground chicken
- 2lime
- 1 tablespoonfresh ginger
- 3 clovesgarlic
- 6scallions
- 2 tablespoonsoy sauce
- 1 tablespoonrice vinegar
- 1 teaspoonsesame oil
- 1 tablespoonvegetable oil
- ¼ teaspoonred pepper flakes

Juice 2 limes and set aside.

Mince 1 tablespoon fresh ginger and 3 cloves garlic.

Slice 6 scallions into 1/2-inch pieces, keeping white and green parts separate if desired.
Method

Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat.

Add the ground chicken, breaking it into small pieces as it cooks, about 5-7 minutes until cooked through. Season with salt and pepper, then transfer to a plate.

Return the skillet to medium heat and add minced ginger and garlic. Cook, stirring, for about 1 minute until fragrant.

Add the cooked chicken back to the skillet along with 2 tablespoons soy sauce, 1 tablespoon rice vinegar, 1 teaspoon sesame oil, and 1/4 teaspoon red pepper flakes. Stir to combine.

Add 2/3 of the chopped scallions (reserve the rest for garnish) and the juice of 2 limes. Toss everything together for 1-2 minutes until heated through and fragrant.

Taste and adjust seasoning with more lime juice, soy sauce, or salt as needed. Garnish with remaining scallions and serve over rice or noodles.
Spice Tips
For extra heat, increase red pepper flakes to 1/2 teaspoon or add a pinch of cayenne. For deeper umami, try a splash of fish sauce or a touch of miso paste. A handful of fresh cilantro or mint stirred in at the end adds brightness.
