Creamy Garlic Ground Chicken Pasta
Ingredients
- 1 poundground chicken
- 12 ouncespasta (penne or farfalle work well)
- 4 clovesgarlic
- 2 tablespoonsbutter
- 2 tablespoonsall-purpose flour
- 1 cupchicken broth
- ½ cupheavy cream
- ½ cupparmesan cheese
- ·salt
- ·black pepper
- ·fresh parsley
Prep
- 01
Mince 4 cloves garlic.
- 02
Chop a small handful of fresh parsley for garnish.
Method
- 01
Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 10 minutes. Drain and set aside, reserving 1/2 cup pasta water.
- 02
While pasta cooks, melt butter in a large skillet over medium-high heat. Add ground chicken and cook, breaking it apart with a spoon, until no pink remains and it's lightly browned, about 5–6 minutes. Season with salt and pepper.
- 03
Sprinkle flour over the chicken and stir constantly for 1 minute to cook out the raw flour taste.
- 04
Pour in chicken broth, scraping up any browned bits from the pan. Bring to a simmer and cook for 2 minutes.
- 05
Stir in heavy cream and parmesan cheese. Simmer gently for 2–3 minutes, stirring, until the sauce is smooth and coats the back of a spoon. If it's too thick, thin with reserved pasta water a splash at a time.
- 06
Toss the cooked pasta into the sauce, stir to coat, and taste for seasoning. Add more salt and pepper if needed.
- 07
Divide into bowls and garnish with fresh parsley.
Spice Tips
For a subtle warmth, add 1/4 teaspoon red pepper flakes to the chicken as it browns. For an herbaceous note, stir in 1 teaspoon fresh thyme or a pinch of Italian seasoning with the cream.
