Creamy Tomato Ground Chicken with Crispy Sage
Ingredients
- 1½ poundsground chicken

- 1 can (14.5 oz)canned diced tomatoes

- ½ cupchicken broth

Dice 1 medium yellow onion.

Mince 3 cloves garlic.

Roughly tear a small handful of fresh sage leaves (about 8–10 leaves).

Bring a large pot of salted water to a boil for the pasta.

While water heats, warm 2 tablespoons olive oil in a large skillet over medium-high heat. Add the ground chicken and cook, breaking it into small pieces, until no pink remains, about 5–7 minutes. Season with salt and pepper. Transfer to a plate.

In the same skillet, add the diced onion and cook until softened, about 4 minutes. Add the minced garlic and cook for 30 seconds until fragrant.

Pour in the canned tomatoes (with juice) and chicken broth. Scrape the bottom of the pan to release any browned bits. Return the chicken to the skillet and stir to combine.

Simmer for 8–10 minutes, stirring occasionally, until the sauce reduces slightly and deepens in color.

Stir in the heavy cream and several torn sage leaves. Taste and adjust seasoning with salt and pepper. Simmer for 2 more minutes.

Meanwhile, cook the pasta in the boiling water according to package directions. Drain and divide among bowls.

Spoon the creamy chicken sauce over the pasta. Shred a small handful of fresh sage leaves, scatter on top, and finish with grated parmesan.
Spice Tips
For earthiness, add 1/4 teaspoon dried thyme or a pinch of nutmeg to the tomato sauce. For heat, stir in a small pinch of red pepper flakes along with the garlic. A squeeze of fresh lemon juice at the end brightens everything.
Make this ahead by chilling the sauce for up to 2 days; reheat gently over medium-low heat and finish with fresh sage and cream just before serving. A dollop of sour cream can substitute for heavy cream in a pinch.
