- 1 poundsweet potato
- ·yellow onion
- ·garlic
- 2 tablespoonolive oil
- 1 cupchicken broth
- 1 teaspooncumin
- ½ teaspoonsmoked paprika
- 1lime
- ·cilantro
- ·salt and black pepper
Prep
- 01
Dice 1 pound sweet potato into 1/2-inch cubes.
- 02
Dice 1 medium yellow onion.
- 03
Mince 2 cloves garlic.
- 04
Chop a handful of fresh cilantro for garnish.
Method
- 01
Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, until browned and no longer pink, about 5–6 minutes. Season with salt and pepper, then transfer to a plate.
- 02
In the same skillet, add the diced onion and cook for 2–3 minutes until softened. Add the minced garlic and cook for 30 seconds until fragrant.
- 03
Add the diced sweet potato, 1 teaspoon cumin, and 1/2 teaspoon smoked paprika. Stir to coat, then pour in 1 cup chicken broth.
- 04
Return the turkey to the skillet and bring to a simmer. Cook uncovered for 12–15 minutes, stirring occasionally, until the sweet potato is tender and most of the liquid has reduced.
- 05
Remove from heat, squeeze the juice of 1 lime over the top, and stir in a handful of chopped cilantro. Taste and adjust seasoning with salt and pepper. Serve hot.
Spice Tips
For smokier depth, add another 1/4 teaspoon smoked paprika. If you like heat, stir in a pinch of cayenne or red pepper flakes in step 3. A dash of hot sauce on the side lets diners dial in their own spice level.
Serve over rice, quinoa, or with warm flour tortillas. Leftovers reheat well in the microwave.
