Add the diced sweet potato and 3/4 cup chicken broth. Bring to a gentle simmer.
- 05
Reduce heat to medium and cover. Simmer for 12–15 minutes, stirring occasionally, until sweet potato is tender.
- 06
Season to taste with kosher salt and black pepper. Serve warm as is, over rice, or with crusty bread.
Spice Tips
For warmth, add a pinch of cayenne or red pepper flakes with the spices. A squeeze of fresh lime juice at the end brightens all the flavors. Chopped cilantro or fresh parsley makes a nice garnish.
Leftovers keep in the fridge for up to 3 days and reheat beautifully. For a heartier meal, serve over rice, couscous, or with a dollop of Greek yogurt.
