Spiced Ground Turkey & Sweet Potato Skillet with Crispy Edges
Ingredients
- 1 poundground turkey
- 2 mediumsweet potato
- 1 mediumyellow onion
- 3 clovesgarlic

- ½ cupchicken broth

Prep

Peel and cut 2 medium sweet potatoes into 1/2-inch dice.

Dice 1 medium yellow onion.

Mince 3 cloves garlic.
Method

Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Once hot, add the ground turkey and cook, breaking it into small pieces with a wooden spoon, until no pink remains (about 5-7 minutes). Season with 1/4 teaspoon salt and 1/8 teaspoon black pepper. Transfer to a plate.

In the same skillet, add the remaining 1 tablespoon olive oil. Add the diced sweet potato and cook undisturbed for 3-4 minutes until the bottom begins to caramelize, then stir and cook another 3-4 minutes until mostly tender.

Stir in the diced onion and cook for 2 minutes until softened. Add the minced garlic, smoked paprika, cumin, and thyme. Stir constantly for 30 seconds until fragrant.

Return the turkey to the skillet. Pour in the chicken broth and stir to combine. Simmer for 3-4 minutes until the sweet potato is completely tender and the liquid has mostly reduced, creating a light glaze.

Taste and adjust seasoning with salt and pepper. Serve warm, topped with fresh sage leaves if desired.
Spice Tips
For extra warmth and depth, add 1/4 teaspoon cayenne or a pinch of smoked black pepper. A squeeze of fresh lemon juice at the end brightens all the spices. If you like heat, a small pinch of red pepper flakes works nicely.
Leftovers keep well in the fridge for 3 days and reheat beautifully. You can swap the sweet potato for butternut squash or add a handful of spinach in the final minute for extra greens.
