  • 1 poundground turkey

    Cut 2 medium sweet potatoes into 1/2-inch cubes

    Dice 1 medium yellow onion

    Mince 3 cloves garlic

    Mince 1 tablespoon fresh ginger

Method

    Cut 2 medium sweet potatoes into 1/2-inch cubes. Dice the yellow onion and mince 3 cloves garlic. Finely mince 1 tablespoon fresh ginger.

    Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the sweet potato cubes and cook for 5-6 minutes, stirring occasionally, until they start to soften and brown at the edges.

    Push the sweet potatoes to the side. Add the ground turkey to the cleared space and cook for 4-5 minutes, breaking it into small pieces with a spoon, until no pink remains.

    Add the diced onion and minced garlic to the pan. Stir everything together and cook for 2 minutes until fragrant.

    In a small bowl, whisk together 3 tablespoons soy sauce, 1 tablespoon rice vinegar, the minced ginger, and 1 teaspoon sesame oil.

    Pour the glaze over the turkey and sweet potatoes. Sprinkle with 1/4 teaspoon red pepper flakes and stir to coat. Cook for 2-3 minutes until the liquid slightly reduces and coats everything.

    Transfer to a serving dish or bowls. Chop scallion and scatter over the top as garnish.

Spice Tips

For extra heat, increase red pepper flakes to 1/2 teaspoon or add a dab of sriracha to the glaze. For brightness, squeeze fresh lime juice over the finished dish or swap the rice vinegar for a splash of lime juice instead.

Serve over rice, quinoa, or noodles if you'd like more bulk. The recipe is naturally complete as a skillet dinner.
