  • 1yellow onion
  • 3 clovesgarlic
  • 2 tablespoonolive oil
  • 1 teaspooncumin
  • ½ teaspooncoriander
  • ½ teaspoonpaprika
  • ¾ cupchicken broth
  • 1lemon
  • ½ cupfresh cilantro
  • ½ cupGreek yogurt
  • ·salt
  • ·black pepper

Prep

  1. 01

Cut 1 pound sweet potato into 1/2-inch cubes.

  2. 02

    Dice 1 yellow onion.

  3. 03

    Mince 3 cloves garlic.

  4. 04

    Juice 1 lemon.

  5. 05

Roughly chop 1/2 cup fresh cilantro.

Method

  1. 01

Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add ground turkey and cook for 4–5 minutes, breaking it apart as it browns, until no pink remains. Season lightly with salt and pepper, then transfer to a plate.

  2. 02

In the same skillet, add diced onion and cook for 3 minutes until soft. Stir in minced garlic and cook for 30 seconds until fragrant.

  3. 03

Add 1 teaspoon cumin, 1/2 teaspoon coriander, and 1/2 teaspoon paprika; stir and cook for 1 minute to bloom the spices.

  4. 04

Add diced sweet potato and 3/4 cup chicken broth. Stir well, scraping the bottom of the skillet. Bring to a simmer.

  5. 05

Return turkey to the skillet, stir to combine, and simmer uncovered for 8–10 minutes, until sweet potato is tender and most liquid is absorbed.

  6. 06

Stir in juice from 1 lemon and half the chopped cilantro. Taste and adjust salt and pepper.

  7. 07

Divide among bowls. Top each serving with a dollop of Greek yogurt, remaining cilantro, and a squeeze of fresh lemon.

Spice Tips

For deeper warmth, add a pinch of cayenne pepper when blooming the spices. If you prefer earthier notes, swap the coriander for 1/4 teaspoon ground ginger or turmeric. Fresh mint makes a bright substitution for cilantro if that's what you have on hand.
