Turkish-Spiced Ground Turkey with Yogurt & Herbs

- ·fresh mint

Dice 1 medium yellow onion.

Mince 2 cloves garlic.

Chop 1/4 cup fresh mint.

Chop 1/4 cup fresh parsley.

Dice 1 cucumber.
Method

Heat 2 tablespoons olive oil in a large skillet over medium-high heat.

Add the diced onion and cook for 3 to 4 minutes, stirring occasionally, until softened.

Stir in the minced garlic and cook for another 30 seconds until fragrant.

Add the ground turkey, breaking it up with a wooden spoon. Cook for 5 to 7 minutes, stirring often, until no pink remains and the meat is lightly browned.

Stir in 1 teaspoon cumin, 1/2 teaspoon coriander, and 1/2 teaspoon paprika. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Cook for 1 minute until the spices bloom.

Remove from heat and stir in the juice of 1/2 lemon and half of the chopped herbs (mint and parsley).

In a small bowl, whisk together 1 cup yogurt, the juice of 1/2 lemon, a pinch of salt, and 1 tablespoon of fresh mint.

Serve the turkey in bowls topped with a dollop of yogurt sauce, diced cucumber, and the remaining fresh herbs.
Spice Tips
For warmth, add a pinch of cayenne pepper to the spice blend. For deeper flavor, try 1/4 teaspoon ground cinnamon alongside the cumin. A splash of hot sauce or harissa swirled into the yogurt adds a gentle kick.
Serve over rice, in pita pockets, or with crusty bread. The yogurt sauce can be made ahead and chilled for up to 2 days.
