Ingredients

  • 1 poundground turkey
  • ·yellow onion
  • ·garlic
  • ·plain yogurt
  • ·lemon
  • ·fresh mint
  • ·fresh cilantro
  • ·fresh parsley
  • ·olive oil
  • ·cumin
  • ·paprika
  • ·salt
  • ·black pepper

Prep

  1. 01

    Dice 1 medium yellow onion.

  2. 02

    Mince 3 cloves garlic.

  3. 03

    Juice 1 lemon.

  4. 04

Roughly chop a handful each of fresh mint, cilantro, and parsley (about 1/3 cup total).

Method

  1. 01

Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 3-4 minutes until soft, then add the minced garlic and cook for another 30 seconds until fragrant.

  2. 02

Add the ground turkey to the pan, breaking it up with a wooden spoon as it cooks for 5-7 minutes until no pink remains. Drain excess liquid if needed.

  3. 03

Stir in 1 teaspoon cumin and 1/2 teaspoon paprika. Season with 3/4 teaspoon salt and 1/4 teaspoon black pepper. Cook for 1 minute until the spices bloom.

  4. 04

Remove from heat and let cool slightly for 2 minutes. Stir in 3/4 cup plain yogurt, the juice of 1 lemon, and half of the chopped fresh herbs (mint, cilantro, and parsley combined).

  5. 05

Divide among bowls or plates. Top with the remaining fresh herbs and a light drizzle of olive oil. Serve warm or at room temperature with pita bread, over rice, or with a simple salad.

Spice Tips

For more warmth, add a pinch of cayenne pepper or 1/4 teaspoon crushed red pepper flakes when you add the cumin. A touch of cinnamon (1/8 teaspoon) adds subtle warmth. If you prefer sharper acidity, use 1.5 lemons instead of 1.

This dish is naturally dairy-forward and benefits from full-fat yogurt for richness. It's best served warm or at room temperature rather than piping hot — the yogurt will break if it gets too hot. Leftovers keep refrigerated for 3 days and are excellent cold the next day in a pita with extra greens.
