Za'atar Turkey Skillet with Lemon & Spinach
Ingredients

Mince 3 cloves garlic.

Method

Heat 2 tablespoons olive oil in a large skillet over medium-high heat.

Add the ground turkey and cook, breaking it into small pieces as it browns, about 5–6 minutes. Drain excess fat if needed.

Add the diced onion and cook for 2–3 minutes until softened. Stir in the minced garlic and cook for 30 seconds until fragrant.

Sprinkle 2 teaspoons za'atar over the turkey and stir well to coat. Cook for 1 minute.

Pour in 1/2 cup chicken broth and add the juice of 1 lemon. Stir and simmer for 2–3 minutes.

Add 4–5 cups fresh spinach in batches, stirring until wilted, about 2 minutes total.

Taste and adjust seasoning with salt, pepper, and additional lemon juice if needed. Serve immediately.
Spice Tips
For deeper warmth, add a pinch of ground cumin or coriander when you add the za'atar. For gentle heat, stir in 1/4 teaspoon Aleppo pepper or red pepper flakes. A drizzle of tahini on the plate adds nutty richness.
Za'atar is a Middle Eastern spice blend heavy on sumac; look for it in the international aisle or online. If unavailable, substitute 1 teaspoon ground cumin + 1/2 teaspoon dried oregano + 1/2 teaspoon lemon zest.
