Creamy Ham and White Bean Skillet
Ingredients
- 2 tablespoonsolive oil
- 1yellow onion
- 4 clovesgarlic
- 8 ouncesdiced ham
- 2 mediumcarrots
- 2 stalkscelery
- 2 cans (15 oz each)white beans
- 2 cupschicken broth
- ½ cupheavy cream
- 1bay leaf
- 3 sprigsfresh thyme
- ·salt
- ·black pepper
- 1 tablespoonDijon mustard
Prep

Dice 1 yellow onion.

Mince 4 cloves garlic.

Dice 2 medium carrots.

Chop 2 celery stalks into small pieces.
Method

Heat olive oil in a large skillet or Dutch oven over medium heat. Add the onion and cook for 4 minutes, stirring occasionally, until softened.

Add garlic and cook for 1 minute until fragrant. Stir in the ham and cook for 2 minutes.

Add carrots and celery. Cook for 3 minutes, stirring, until the vegetables begin to soften.

Pour in chicken broth and add bay leaf and thyme sprigs. Bring to a simmer and cook for 5 minutes.

Drain and rinse the beans, then add to the skillet. Simmer for 5 minutes.

Stir in heavy cream and Dijon mustard. Taste and season with salt and black pepper. Simmer for 2 more minutes until heated through.

Remove bay leaf and thyme sprigs. Ladle into bowls and serve hot.
Spice Tips
For a touch of warmth, add 1/4 teaspoon smoked paprika with the ham. If you prefer a hint of sharpness, increase the Dijon mustard to 1 1/2 tablespoons. Fresh cracked black pepper finishes nicely on top.
