Ham and Green Bean Skillet with Crispy Shallots

Ingredients

  • 1 poundham steak (bone-in preferred)
  • 1½ poundgreen beans
  • 3shallot
  • 3 clovesgarlic
  • 2 tablespoonolive oil
  • 1 tablespoonunsalted butter
  • 1 tablespoonapple cider vinegar
  • 1 teaspoonDijon mustard
  • ·salt
  • ·black pepper

Prep

    Trim green beans and cut them in half.

    Thinly slice 3 shallots.

    Mince 3 garlic cloves.

Method

    Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Pat the ham steak dry and place it in the pan. Sear for 4 minutes per side until browned. Transfer to a plate.

    Add remaining 1 tablespoon olive oil to the pan. Add shallots and cook, stirring occasionally, for 4 minutes until they begin to soften and brown. Push to the sides.

    Add green beans to the center of the pan and season with salt and pepper. Cook for 5 minutes, stirring occasionally, until they start to soften.

    Stir in minced garlic and cook for 1 minute until fragrant.

    Return ham steak to the pan. Add butter, apple cider vinegar, and Dijon mustard. Toss everything together and cook for 3 minutes until the beans are tender-crisp and the ham is heated through. Taste and adjust seasoning if needed. Serve immediately.

Spice Tips

For a touch of sweetness and spice, add 1/2 teaspoon smoked paprika when you add the garlic. A pinch of red pepper flakes adds warmth. Fresh thyme sprinkled at the end brightens the dish.

If your ham steak is quite thick (over 1 inch), increase searing time by 1–2 minutes per side. You can swap the green beans for Brussels sprouts, snap peas, or broccoli — adjust cooking time slightly as needed.
