Ground Turkey & Zucchini Noodle Bowls with Lime-Ginger Drizzle
Ingredients

- 3 mediumzucchini

Prep

Spiralize 3 medium zucchini into noodles or use a julienne peeler; set aside.

Mince 3 cloves garlic and 1 tablespoon fresh ginger; set aside.

Juice 2 limes; set aside.

Dice 1 medium red bell pepper and 1 medium cucumber.

Slice 3 scallions on the bias.

Chop 1/4 cup fresh cilantro.
Method

Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground turkey, breaking it into small pieces as it cooks, until it is no longer pink and cooked through, about 8–10 minutes. Transfer to a plate.

In a small bowl, whisk together 2 tablespoons soy sauce, 1 tablespoon sesame oil, juice of 1 lime, minced ginger, and minced garlic. Set aside.

Divide zucchini noodles among 4 bowls. Top each with cooked turkey, diced bell pepper, sliced cucumber, and sliced scallions.

Drizzle the lime-ginger sauce over each bowl. Garnish with cilantro, a squeeze of fresh lime juice, salt, and black pepper. Serve immediately.
Spice Tips
For a kick of heat, add a pinch of red pepper flakes or a drizzle of sriracha to the lime-ginger sauce. A tiny pinch of white pepper adds a subtle warmth. Fresh mint can substitute for or complement the cilantro for a more herbaceous note.
Make-ahead: spiralize zucchini and chop vegetables up to 4 hours ahead, storing in separate containers. Cook the turkey and prepare sauce just before serving for the freshest flavor. Zucchini noodles are delicate and best enjoyed immediately after assembly.
