Cilantro-Lime Ground Beef Lettuce Wraps with Charred Corn

Ingredients

  • 1 lbground beef
  • ·yellow onion
  • ·garlic
  • ·lime
  • ·fresh cilantro
  • 2 earscorn
  • 1 tablespoonbutter
  • ·salt
  • ·black pepper
  • ½ teaspooncumin
  • ¼ teaspoonred pepper flakes
  • 1 headbutter lettuce or romaine
  • 1avocado
  • 4radish

Prep

    Dice 1 medium yellow onion.

    Mince 3 cloves garlic.

  3. 03

    Juice 1 lime.

  4. 04

    Chop a handful of fresh cilantro.

    Slice 4 radishes thinly.

Method

    Heat a large skillet over medium-high heat. Add 1 tablespoon butter and swirl to coat.

    Add corn ears and char for 8–10 minutes, turning occasionally, until kernels are golden brown and blistered. Remove to a cutting board and let cool slightly, then cut kernels from the cob.

    In the same skillet, add ground beef and cook over medium-high heat, breaking it into small pieces as it browns, about 6–7 minutes. Drain excess fat if needed.

    Add the cooked onion and garlic mixture to the beef. Stir in cumin and red pepper flakes, cooking for 1 minute until fragrant.

    Remove from heat and stir in the lime juice, most of the cilantro (reserve some for garnish), charred corn kernels, salt, and pepper. Taste and adjust seasoning.

    Serve the beef mixture in lettuce leaf cups, topped with avocado slices, radish slices, and remaining cilantro.

Spice Tips

For extra heat, stir in a pinch of cayenne or a diced jalapeño with the garlic. A splash of hot sauce drizzled over the wraps adds brightness and kick. For more depth, try a pinch of smoked paprika alongside the cumin.

For a cooler meal, chill the beef mixture before serving and use it as a filling for cold lettuce wraps the next day. Substitute grilled zucchini or bell peppers for corn if preferred.
