Garlic-Ginger Beef and Broccoli Skillet

Ingredients

  • 1½ poundground beef
  • 6 cupbroccoli florets
  • 6 clovegarlic
  • 1 tablespoonfresh ginger
  • 3 tablespoonsoy sauce
  • 1 tablespoonrice vinegar
  • 1 teaspoonhoney
  • 2 tablespoonvegetable oil
  • 1 tablespoonsesame seeds
  • 2 stalkgreen onion

    Mince 6 cloves garlic

    Mince 1 tablespoon fresh ginger

    Cut broccoli into florets (about 6 cups)

    Slice 2 green onions

Method

    Heat 1 tablespoon oil in a large skillet over medium-high heat. Add ground beef and cook for 5-7 minutes, breaking it into small pieces, until browned. Drain excess fat if needed.

    Push beef to the side of the pan. Add remaining 1 tablespoon oil and stir in minced garlic and ginger. Cook for 30 seconds until fragrant.

    Add broccoli florets and stir everything together. Cook for 4-5 minutes, stirring occasionally, until broccoli is tender-crisp.

    In a small bowl, whisk together soy sauce, rice vinegar, and honey. Pour over the beef and broccoli, toss to coat, and cook for 1 minute more.

    Divide among plates. Top with sesame seeds and sliced green onion. Serve immediately, optionally with rice on the side.

Spice Tips

For heat, stir in 1/4 teaspoon red pepper flakes with the garlic and ginger. For deeper savory flavor, add 1/2 teaspoon sesame oil to the sauce. A squeeze of fresh lime juice just before serving brightens the whole dish.

This recipe is naturally high in protein from the beef (about 40g per serving). Serve over steamed rice or with cauliflower rice for a lower-carb option.
