Creamy Garlic Kale with Crispy Shallots

  • 1 poundkale
  • 2shallot
  • 4 clovesgarlic
  • 3 tablespoonolive oil
  • ¾ cupheavy cream
  • ½ cupchicken broth
  • ½ cupparmesan cheese (freshly grated)

  • ·nutmeg

Prep

    Remove stems from kale and tear leaves into bite-sized pieces.

    Slice 2 shallots into thin rings.

    Mince 4 cloves garlic.

Method

    Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add shallots and cook, stirring occasionally, until golden and crispy, about 5 minutes. Transfer to a paper towel and season with salt.

    Add remaining 1 tablespoon oil to the same pan. Add garlic and cook for 30 seconds until fragrant.

    Add kale in batches, stirring after each addition, until wilted, about 4–5 minutes total.

    Pour in chicken broth and cream. Simmer for 3 minutes, stirring occasionally.

    Stir in parmesan cheese until melted and the sauce is creamy. Season with salt, pepper, and a pinch of nutmeg.

    Transfer to a serving dish and top with crispy shallots. Serve warm.

Spice Tips

For a subtle warmth, add 1/4 teaspoon white pepper or a small pinch of cayenne in the final seasoning. A squeeze of fresh lemon juice at the end brightens the cream.

Make ahead: prep the kale and shallots up to 4 hours earlier and store in the fridge. The dish reheats gently on the stovetop with a splash of broth if needed.
