Buttery Garlic Pasta with Peas and Parmesan

Ingredients

  • 12 ouncespasta (small shapes like penne or fusilli)
  • 4 tablespoonbutter
  • 3 clovegarlic
  • 1½ cupfrozen peas
  • ½ cupParmesan cheese (freshly grated)
  • ½ teaspoonsalt
  • ¼ teaspoonblack pepper
  • ½ cuppasta water

    Mince 3 cloves garlic.

    Grate 1/2 cup Parmesan cheese.

Method

    Bring a large pot of salted water to a boil. Add pasta and cook according to package directions until al dente, about 10 minutes.

    Reserve 1/2 cup pasta water, then drain the pasta.

    In the same pot, melt butter over medium heat. Add minced garlic and cook for 1 minute until fragrant.

    Add frozen peas and cook for 2 minutes, stirring occasionally.

    Return the drained pasta to the pot. Toss well with the butter and peas.

    Remove from heat. Stir in Parmesan cheese, salt, and black pepper. Add pasta water a splash at a time until the sauce coats the noodles with a light creaminess.

    Divide into bowls and serve warm.

Spice Tips

This dish is mild by design, but older kids may enjoy a small pinch of red pepper flakes mixed into their bowl, or a crack of black pepper on top.
