Kielbasa & Charred Cabbage Skillet with Caraway
Ingredients
- 1 poundkielbasa sausage (smoked)
- ½ headgreen cabbage
- 1 mediumyellow onion
- 2 tablespoonolive oil
- 1 teaspooncaraway seeds
- 1 tablespoonapple cider vinegar
- ½ cupchicken broth
- 1 teaspoonkosher salt
- ½ teaspoonblack pepper

Slice 1 pound kielbasa into ½-inch-thick rounds

Dice 1 medium yellow onion

Cut 0.5 head green cabbage into bite-sized chunks

Slice the kielbasa into ½-inch-thick rounds. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the kielbasa and cook until browned on both sides, about 5 minutes total. Transfer to a plate.

Add the remaining 1 tablespoon oil to the skillet. Add the onion and cook for 2 minutes until softened. Add the cabbage, caraway seeds, salt, and pepper. Stir well and cook for 4–5 minutes, stirring occasionally, until the cabbage begins to soften and char at the edges.

Return the kielbasa to the skillet. Add the apple cider vinegar and chicken broth. Stir, reduce heat to medium, and simmer for 5 minutes until the cabbage is tender and flavors meld. Taste and adjust seasoning if needed.

Divide between plates and serve hot.
Spice Tips
For subtle heat, add a pinch of cayenne pepper or a few red pepper flakes at the end. For deeper spice flavor, increase caraway seeds to 1.5 teaspoons or add ½ teaspoon ground mustard with the caraway.
Serve on its own or with crusty bread to soak up the broth. Leftovers reheat well.
