Kielbasa & Peppers with Charred Lemon

Ingredients

  • 1 poundkielbasa (fully cooked)
  • 3bell peppers (mixed colors)
  • 1yellow onion
  • 2lemon
  • 3 tablespoonolive oil
  • 4 clovesgarlic
  • 1 teaspoonfresh thyme

Prep

    Slice kielbasa into ¼-inch-thick rounds.

    Dice 3 bell peppers into ¾-inch chunks.

    Dice 1 yellow onion into ½-inch pieces.

    Mince 4 garlic cloves.

Method

    Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Slice kielbasa into ¼-inch-thick rounds and add to the pan. Cook for 3–4 minutes, stirring occasionally, until lightly browned on both sides. Transfer to a plate.

    Add 1 tablespoon olive oil to the same skillet. Add diced onion and bell peppers. Cook for 5–6 minutes, stirring often, until softened and beginning to char at the edges.

    Stir in minced garlic and thyme. Cook for 1 minute until fragrant.

    Return kielbasa to the skillet. Halve the lemons and place them cut-side down directly on the mixture. Let them caramelize for 2–3 minutes without stirring, then stir everything together. Squeeze the charred lemon juice over the dish. Season with salt and pepper to taste.

    Cook for 1–2 minutes more to meld flavors. Serve hot, with the charred lemon halves on the side for extra squeeze.

Spice Tips

For heat, add ¼ teaspoon red pepper flakes when you stir in the garlic. For smokiness, sprinkle smoked paprika over the finished dish. A pinch of fresh dill complements the lemon beautifully.

Serve over rice, in a crusty roll, or alongside roasted potatoes to catch the bright pan sauce. Kielbasa is already fully cooked, so this dish comes together in under 25 minutes.
