- 4 cupfresh spinach
- 4 clovegarlic
- 2 tablespoonolive oil
- ½ cupchicken broth
- 1lemon
- ½ teaspoonsalt
- ¼ teaspoonblack pepper
- ½ teaspoondried thyme
Prep
- 01
Slice 12 ounces mushrooms into 1/4-inch thick pieces.
- 02
Mince 4 cloves garlic.
- 03
Cut 1 lemon in half for juicing.
Method
- 01
Pat the chicken thighs dry with paper towels and season both sides with 1/4 teaspoon salt and 1/8 teaspoon black pepper.
- 02
Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering.
- 03
Place chicken skin-side down in the pan and cook for 6–7 minutes without moving, until the skin is golden and crispy. Flip and cook for another 4–5 minutes until the second side browns. Transfer to a plate.
- 04
Add the minced garlic to the pan and stir for 30 seconds until fragrant.
- 05
Add the sliced mushrooms, remaining salt, remaining pepper, and thyme. Stir and cook for 4–5 minutes until the mushrooms release their liquid and begin to soften.
- 06
Pour in the chicken broth, scraping any browned bits from the bottom of the pan. Return the chicken thighs skin-side up to the skillet.
- 07
Reduce heat to medium and simmer for 8–10 minutes until the chicken is cooked through (internal temperature 165°F).
- 08
Stir in the spinach and cook for 1–2 minutes until wilted. Squeeze the lemon juice over the dish and taste for seasoning.
- 09
Serve from the pan or divide among plates, spooning the mushrooms and pan sauce over each portion.
Spice Tips
For warmth and depth, add 1/4 teaspoon garlic powder or smoked paprika to the pan after the mushrooms soften. Red pepper flakes add gentle heat—start with a pinch. Fresh thyme or tarragon in place of dried thyme brightens the finish.
Make-ahead: Season the chicken and prep the mushrooms and garlic up to 4 hours ahead, covered in the refrigerator. This recipe is naturally keto and paleo-friendly. For extra richness, finish with a pat of butter or dollop of sour cream.
