Buttered Peas with Crispy Shallots and Thyme
Ingredients

Slice 2 shallots into thin rings, about 1/8 inch thick.

Measure out 3 cups frozen peas.

Rinse and pat dry 4 fresh thyme sprigs.

Melt 2 tablespoons butter in a large skillet over medium heat. Add the shallot rings and cook, stirring occasionally, for 6-8 minutes until golden and crispy. Transfer to a paper towel and season lightly with salt.

In the same skillet, melt the remaining 1 tablespoon butter over medium heat. Add the thyme sprigs and cook for 30 seconds until fragrant.

Add the frozen peas directly to the skillet (no need to thaw). Stir and cook for 3-4 minutes until heated through and bright green.

Season with salt and pepper to taste. Remove from heat, discard thyme sprigs, and transfer to a serving bowl.

Top with the crispy shallots and serve immediately.
Spice Tips
To add warmth, finish with a pinch of smoked paprika or white pepper. A small pinch of cayenne on top adds subtle heat without overwhelming the delicate peas. Fresh lemon zest brightens the whole dish if you like citrus.
Swap the thyme for rosemary or sage for a different herbaceous note. The crispy shallots can be made 2-3 hours ahead and stored in an airtight container.
