Crispy Garlic Butter Peas with Thyme

Ingredients

  • 3 tablespoonbutter
  • 4 clovesgarlic
  • 3 cupfrozen peas
  • 4 sprigsfresh thyme
  • ·kosher salt
  • ·black pepper
  • ½lemon

    Mince 4 cloves garlic.

    Cut 1/2 lemon into a wedge for juicing.

Method

    Melt 3 tablespoons butter in a large skillet over medium-high heat.

    Add minced garlic and cook for 30 seconds, stirring constantly, until fragrant but not browned.

    Pour in 3 cups frozen peas and 4 sprigs fresh thyme. Stir to coat evenly in butter.

    Cook for 4 to 5 minutes, stirring occasionally, until peas are bright green and heated through. Some peas will turn golden and crispy at the edges.

    Season generously with kosher salt and black pepper to taste.

    Squeeze juice from 1/2 lemon over the pan, stir, and serve immediately.

Spice Tips

For depth, add a pinch of red pepper flakes when you add the garlic. A grating of nutmeg stirred in at the end adds subtle warmth. Try a small splash of balsamic vinegar instead of lemon for earthier brightness.

Frozen peas work perfectly here and skip the thawing step. For a grain base, serve over buttered toast, polenta, or couscous. This is also a great side dish for roasted chicken or fish.
