Crispy Garlic Peas with Chili Oil and Lime
Ingredients

- ¼ teaspoonblack pepper

Mince 6 garlic cloves.

Slice 2 scallions, separating white and light green parts if desired.

Heat 3 tablespoons olive oil in a large skillet over medium-high heat.

Add minced garlic and red pepper flakes, stirring constantly for about 30 seconds until fragrant and garlic begins to turn light golden.

Add frozen peas (no need to thaw) and stir well. Cook for 4–5 minutes, shaking the pan occasionally, until the peas are heated through and some begin to blister and turn dark at the edges.

Remove from heat. Squeeze juice from 1 lime over the peas, then season with 1/4 teaspoon salt and 1/4 teaspoon black pepper. Toss to combine.

Transfer to a serving bowl and top with sliced scallions. Taste and adjust salt, lime, or heat as needed.
Spice Tips
For milder heat, reduce red pepper flakes to 1/4 teaspoon. For extra kick, add a pinch of cayenne along with the red pepper flakes, or finish with a few drops of hot sauce. A scatter of toasted sesame seeds or a drizzle of fish sauce adds savory depth.
This works as a side or light lunch over rice. You can prep the garlic and scallions up to a few hours ahead and store them in separate containers.
