Garlic & Lemon Peas with Crispy Shallots

Ingredients

  • 3 cupsfrozen peas
  • 2 mediumshallots
  • 3 clovesgarlic
  • 3 tablespoonolive oil
  • 1lemon
  • ·salt
  • ·black pepper
  • ¼ cupfresh mint (optional)

Prep

    Thinly slice 2 shallots into thin rings. Heat 2 tablespoons olive oil in a skillet over medium heat and fry shallot rings until golden and crispy, about 4–5 minutes. Transfer to a paper towel.

    Mince 3 cloves garlic.

Method

    Heat 2 tablespoons olive oil in a large skillet over medium-high heat.

    Add the crispy shallots (from prep) and cook for 1 minute until fragrant, then set aside on a paper towel-lined plate.

    In the same skillet, add the remaining 1 tablespoon olive oil and minced garlic. Sauté for 30 seconds until aromatic.

    Add the frozen peas and cook for 3–4 minutes, stirring occasionally, until heated through and tender.

    Squeeze in the juice of 1 lemon and season with salt and black pepper to taste.

    Transfer to a serving bowl, top with crispy shallots and fresh mint if using, and serve immediately.

Spice Tips

For depth, add a pinch of red pepper flakes when cooking the garlic. A small splash of white wine (2 tablespoons) adds acidity instead of lemon if preferred. Finish with a grating of Parmesan or a drizzle of truffle oil for richness.

Serve as a side dish or toss with warm pasta or rice for a light main. Make-ahead: fry the shallots earlier in the day and store in an airtight container; rewarm gently in a dry skillet before serving.
