Lemon Butter Peas with Crispy Shallots
Ingredients
- 3 cupsfrozen peas
- 3 tablespoonbutter
- 2 mediumshallots
- 2 clovegarlic
- 1lemon
- ½ cupchicken broth

- ·black pepper
- ¼ cupfresh dill (loosely packed)

Mince 2 cloves garlic.

Zest 1 lemon and cut it in half for juicing.

Chop 1/4 cup fresh dill.

Slice the 2 shallots into thin rings. Heat 2 tablespoons butter in a large skillet over medium-high heat. Once foaming, add shallots and cook for 4–5 minutes, stirring occasionally, until golden and crispy. Transfer to a plate and set aside.

Reduce heat to medium. Add remaining 1 tablespoon butter to the pan. Add minced garlic and cook for 30 seconds until fragrant.

Pour in the 3 cups frozen peas and 1/2 cup chicken broth. Stir, then simmer for 3–4 minutes until peas are tender and liquid slightly reduces.

Zest the lemon directly into the pan, then halve it and squeeze in the juice. Taste and season with sea salt and black pepper.

Divide between bowls. Top with crispy shallots and fresh dill. Serve immediately.
Spice Tips
For a touch of heat, add a pinch of red pepper flakes to the pan with the garlic. For deeper flavor, swap the dill for tarragon or parsley. A grating of Parmesan on top adds savory richness.
