Crispy Bacon & New Potato Salad with Lemon Dressing
Ingredients
- 1½ poundsnew potatoes
- 6 slicesbacon
- 1lemon
- 3 tablespoonolive oil
- 1 smallshallot
- ½ teaspoondijon mustard
- 2 tablespoonfresh dill

Mince 1 small shallot.

Juice 1 lemon.

Chop 2 tablespoons fresh dill.

Place new potatoes in a pot of cold salted water, bring to a boil, and simmer for 12–15 minutes until just tender. Drain and let cool slightly.

While potatoes cook, place bacon in a large skillet over medium-high heat and cook until crispy, 6–8 minutes. Transfer to a paper towel and break into bite-sized pieces.

In a small bowl, whisk together lemon juice, 3 tablespoons olive oil, mustard, and minced shallot. Season with salt and pepper.

Halve the warm potatoes and transfer to a large bowl. Pour dressing over them while still warm and toss gently.

Add crispy bacon and fresh dill, toss again, and taste for seasoning. Serve warm or at room temperature.
Spice Tips
Add a pinch of smoked paprika to the dressing for depth, or a small pinch of cayenne if you'd like gentle heat. A dash of fresh tarragon works beautifully in place of dill for a more elegant finish.
This salad is best served within a few hours but tastes good at room temperature. For a vegetable boost, toss in fresh arugula or spinach just before serving.
