Crispy Sausage & Potato Sheet Pan with Lemon & Herbs
Ingredients
- 1½ poundssmall potatoes
- 4 linksItalian sausage
- 3 tablespoonsolive oil
- 1lemon
- 4 clovesgarlic
- 2 teaspoonsfresh thyme
- 1 teaspoonfresh rosemary
- 1 teaspoonkosher salt
- ½ teaspoonblack pepper
- 4 cupsarugula
- ¼ cupfresh parsley

Halve small potatoes.

Mince 4 cloves garlic (or slice thin).

Zest lemon and cut into wedges.

Chop fresh parsley.
Method

Preheat oven to 425°F.

Toss potatoes with 2 tablespoons olive oil, thyme, rosemary, salt, and pepper on a large sheet pan. Spread in a single layer and roast for 15 minutes.

Add sausage links to the pan, nestling them among the potatoes. Drizzle sausage with remaining 1 tablespoon olive oil. Roast for another 15 minutes, until potatoes are golden and crispy and sausage is cooked through.

Remove from oven. Slice sausage into thick rounds. Toss everything on the pan with the juice from 1 lemon and most of the parsley.

Divide arugula among plates and top with the sausage and potatoes. Scatter remaining parsley and lemon zest over each plate. Serve immediately.
Spice Tips
For warmth, add 1/4 teaspoon red pepper flakes to the oil before roasting. A pinch of smoked paprika on the potatoes adds subtle depth. Finish with grated Parmesan if you'd like richness.
