Crispy Sausage & Potato Skillet with Caramelized Onions

Ingredients

  • 1 poundsausage (Italian or breakfast, cut into bite-sized pieces)
  • 1½ poundrusset potato
  • 1 mediumyellow onion
  • 3 clovesgarlic
  • 1 cupbeef broth
  • 2 tablespoonolive oil
  • 4 sprigsfresh thyme
  • ·salt
  • ·black pepper
  • ½ teaspoonpaprika

Prep

    Peel and cut russet potatoes into 3/4-inch cubes.

    Dice 1 medium yellow onion.

    Mince 3 cloves garlic.

Method

    Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add sausage pieces and cook until browned on all sides, about 5–7 minutes. Transfer to a plate.

    In the same skillet, add remaining 1 tablespoon olive oil. Add diced onion and cook until soft and caramelized, about 5 minutes, stirring occasionally.

    Add minced garlic and paprika; cook for 30 seconds until fragrant.

    Add diced potatoes and stir to coat. Pour in 1 cup beef broth, season with salt and pepper, and tuck in the thyme sprigs.

    Return sausage to the skillet. Bring to a simmer, cover, and cook for 12–15 minutes until potatoes are tender and most liquid has absorbed.

    Uncover, taste for seasoning, and serve warm. Discard thyme sprigs.

Spice Tips

For deeper flavor, add 1/4 teaspoon smoked paprika or a pinch of caraway seeds. A dash of hot sauce or red pepper flakes at the table brings heat without changing the dish's character.

For extra richness, stir in a splash of heavy cream or sour cream at the end. Leftovers reheat beautifully in a skillet over medium heat.
