Sheet Pan Sausage and Crispy Potatoes with Caramelized Onions
Ingredients
- 1½ poundsrusset potatoes
- 1 poundItalian sausage (sweet or hot, your preference)
- 2 mediumyellow onion
- 3 tablespoonolive oil
- 4 clovesgarlic
- 2 teaspoonfresh thyme (or 1 teaspoon dried)

Cut russet potatoes into 3/4-inch cubes.

Slice 2 yellow onions into half-moons.

Mince 4 cloves garlic.
Method

Preheat oven to 425°F.

On a large sheet pan, toss potatoes and onions with 2 tablespoons olive oil, salt, and pepper. Spread in a single layer and roast for 15 minutes.

While potatoes roast, break sausage into 1-inch chunks and toss with remaining 1 tablespoon olive oil on a separate sheet pan. Roast for 5 minutes.

Remove potatoes from oven and stir. Scatter sausage pieces among the potatoes and onions. Return both pans to oven and roast for 15–20 minutes more, until potatoes are golden and crispy and sausage is cooked through.

Toss everything together in one pan. Add minced garlic, thyme, and a pinch more salt and pepper. Return to oven for 2 minutes to bloom the garlic. Serve hot.
