Sheet-Pan Sausage and Potatoes with Crispy Rosemary
Ingredients
- 1½ poundsfingerling potatoes
- 1 poundItalian sausage (hot or mild, your preference)
- 1 mediumyellow onion
- 4 clovesgarlic
- 3 tablespoonolive oil
- 2 sprigsfresh rosemary

Cut fingerling potatoes into halves or quarters so they're roughly the same size.

Dice 1 medium yellow onion.

Mince 4 cloves garlic.
Method

Preheat oven to 425°F.

Toss potatoes with 2 tablespoons olive oil, salt, and pepper on a large sheet pan. Spread in a single layer and roast for 15 minutes.

While potatoes roast, remove sausage from casings and break into bite-sized chunks.

After 15 minutes, push potatoes to the sides of the pan. Add sausage to the center, along with diced onion, minced garlic, and rosemary sprigs. Drizzle everything with remaining 1 tablespoon oil and toss gently to combine.

Return to oven and roast for 15-18 minutes more, stirring halfway through, until sausage is cooked through and potatoes are golden and tender.

Remove rosemary sprigs, taste, and adjust seasoning with salt and pepper. Serve hot.
