Crispy Pan-Seared Chicken with Creamy Mushroom Sauce

Ingredients

  • 4 countchicken breast (boneless, skinless)
  • ½ teaspoonsalt

  • 2 tablespoonall-purpose flour

  • 8 ouncemushroom
  • 1 countshallot

  • ½ cupdry white wine

  • ½ cupheavy cream
  • 2 teaspoonfresh thyme

Prep

    Slice 8 ounces mushrooms into 1/4-inch-thick slices.

    Mince 1 shallot and 2 cloves garlic.

Method

    Pat chicken breasts dry with paper towels. Season both sides with 1/2 teaspoon salt and 1/4 teaspoon black pepper.

    Dredge each chicken breast lightly in 2 tablespoons flour, shaking off excess.

    Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Once shimmering, add chicken breasts and cook 5–6 minutes per side until golden brown and cooked through (165°F internal temperature). Transfer to a plate.

    In the same skillet, melt 2 tablespoons butter over medium heat. Add mushrooms, cook 3–4 minutes until lightly browned, stirring occasionally.

    Add shallot and garlic, cook 1 minute until fragrant.

    Pour in 1/2 cup white wine, scrape up browned bits from the pan bottom, and simmer 2 minutes to reduce slightly.

    Add 3/4 cup chicken broth, 1/2 cup heavy cream, 2 teaspoons fresh thyme, and 1/2 teaspoon Dijon mustard. Stir well and simmer 2–3 minutes until sauce is silky and slightly thickened.

    Return chicken breasts to the skillet, nestling them into the sauce. Simmer 1 minute to warm through. Serve hot.

Spice Tips

For subtle depth, add 1/4 teaspoon smoked paprika to the sauce. For gentle heat, finish with a small pinch of cayenne pepper. A squeeze of fresh lemon juice at the end brightens all the flavors.

This dish reheats well; store leftovers in an airtight container for up to 2 days. Serve over egg noodles, rice, or crusty bread to soak up the sauce.
