Garlic Butter Shrimp with Charred Tomatoes and Spinach

Ingredients

  • 1 poundlarge shrimp (peeled and deveined)
  • 1½ cupscherry tomatoes
  • 4 cupsfresh spinach
  • 4 clovesgarlic
  • 3 tablespoonsbutter
  • 1 tablespoonolive oil
  • 1lemon
  • ¼ teaspoonred pepper flakes
  • ½ teaspoonsalt
  • ¼ teaspoonblack pepper

Prep

    Peel and devein 1 pound large shrimp if not pre-peeled.

    Mince 4 cloves garlic.

Method

    Zest the lemon and set aside. Cut the lemon in half for juicing later.

    Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat for 1 minute.

    Add the shrimp, season with 1/4 teaspoon salt and 1/8 teaspoon black pepper, and cook for 2 minutes per side until pink and cooked through. Transfer to a plate.

    In the same skillet, add the remaining 2 tablespoons butter and minced garlic. Cook for 30 seconds until fragrant.

    Add the cherry tomatoes and red pepper flakes. Sauté for 3 to 4 minutes, shaking the pan occasionally, until tomatoes begin to burst.

    Stir in the spinach, remaining salt, and remaining pepper. Cook for 1 to 2 minutes until spinach wilts.

    Return the shrimp to the skillet, squeeze juice from 1 lemon half over everything, and toss gently. Taste and adjust seasoning.

    Serve immediately, garnished with lemon zest and the remaining lemon half on the side.

Spice Tips

For a kick of heat, increase red pepper flakes to 1/2 teaspoon or add a pinch of cayenne. For freshness, finish with fresh parsley or basil stirred in at the end. A splash of white wine deglazes the pan beautifully if you have an opened bottle on hand.
