Ingredients

  • 1½ poundslarge shrimp (peeled and deveined)
  • 6 tablespoonsbutter
  • 6 clovesgarlic
  • ½ cupdry white wine
  • 1lemon
  • ¼ teaspoonred pepper flakes
  • ½ teaspoonsalt
  • ¼ teaspoonblack pepper
  • ¼ cupfresh parsley
  • 1 loafcrusty bread

Prep

  1. 01

    Mince 6 cloves garlic.

  2. 02

    Zest and juice 1 lemon.

  3. 03

Roughly chop 1/4 cup fresh parsley.

Method

  1. 01

Pat the shrimp dry with paper towels. Season with 1/4 teaspoon salt and 1/8 teaspoon black pepper.

  2. 02

Heat 3 tablespoons of butter in a large skillet over medium-high heat until foaming.

  3. 03

Add shrimp and cook for 2 to 3 minutes per side until pink and just cooked through. Transfer to a plate.

  4. 04

Add remaining 3 tablespoons butter to the same skillet over medium heat.

  5. 05

Add minced garlic and red pepper flakes. Cook for 30 seconds until fragrant.

  6. 06

Pour in white wine and squeeze in lemon juice. Scrape up any browned bits from the pan bottom. Simmer for 1 minute.

  7. 07

Return shrimp to the skillet. Toss gently to coat. Cook for 1 minute to warm through.

  8. 08

Taste and adjust salt and pepper. Serve immediately with crusty bread for dipping, garnished with fresh parsley.

Spice Tips

For depth, add a pinch of smoked paprika with the garlic. For heat, increase red pepper flakes to 1/2 teaspoon. A tiny anchovy fillet melted into the butter adds savory umami without fishiness.

For a richer sauce, add a splash of heavy cream at the end. Shrimp cooks fast—don't overcook or it becomes rubbery.
