Garlic-Chili Shrimp with Charred Lemon & Herbs

Ingredients

  • 1½ poundsshrimp (large, peeled and deveined)
  • 2lemon
  • 6 clovesgarlic
  • ¼ teaspoonred pepper flakes
  • 4 tablespoonolive oil
  • ¼ cupfresh parsley
  • ¼ cupfresh basil
  • ·kosher salt
  • ·black pepper

    Peel and devein 1.5 pounds large shrimp if not already done.

    Mince 6 cloves garlic.

    Roughly chop fresh parsley and basil.

Method

    Heat 2 tablespoons olive oil in a large skillet over medium-high heat.

    While the oil heats, cut the lemon halves into wedges.

    Once oil shimmers, add lemon wedges cut-side down and cook for 2–3 minutes until charred. Transfer to a plate.

    Add remaining 2 tablespoons oil to the same skillet. Add garlic and red pepper flakes; cook for 30 seconds until fragrant.

    Add shrimp in a single layer, season with salt and pepper, and cook for 2 minutes without stirring.

    Flip shrimp and cook for another 1–2 minutes until pink and cooked through.

    Toss in most of the parsley and basil. Squeeze the charred lemon wedges over the shrimp and toss gently.

    Divide shrimp among bowls, drizzle with pan juices, top with remaining herbs, and serve immediately with charred lemon wedges on the side.

Spice Tips

Red pepper flakes provide gentle warmth. For more heat, double them or add a pinch of cayenne. If you prefer zero spice, omit the flakes entirely and let the garlic and lemon shine.

Serve over pasta, rice, or crusty bread to soak up the lemony pan juices. Shrimp cook very fast—don't overcook or they'll become tough and rubbery.
