Garlicky Shrimp & White Bean Skillet with Spinach

Ingredients

  • 1 poundshrimp (large, peeled and deveined)
  • 3 tablespoonolive oil
  • 6 clovesgarlic
  • ¼ teaspoonred pepper flakes
  • 2 can (15 oz each)canned white beans (drained and rinsed)
  • 1 cupvegetable broth
  • 4 cupfresh spinach (packed)
  • 1 wholelemon
  • 1 to tastesalt and black pepper
  • 1 loafcrusty bread (for serving)

    Mince 6 cloves garlic.

    Cut 1 lemon in half for juicing.

Method

    Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Season shrimp with salt and pepper, then sear for 2 to 3 minutes per side until pink and cooked through. Transfer to a plate.

    In the same skillet, add 1 tablespoon olive oil and cook the garlic and red pepper flakes for 30 seconds until fragrant.

    Add the drained white beans and vegetable broth. Simmer for 3 to 4 minutes.

    Stir in the fresh spinach and cook for 1 to 2 minutes until just wilted.

    Return the shrimp to the skillet and squeeze the juice of 1 lemon over everything. Toss gently to combine, taste, and adjust salt and pepper as needed.

    Serve immediately in bowls with crusty bread alongside for dipping.

Spice Tips

For deeper warmth, increase the red pepper flakes to 1/2 teaspoon or add a pinch of smoked paprika. A dash of hot sauce swirled into individual bowls adds heat without overpowering the garlic. Fresh herbs like parsley or dill sprinkled on top brighten the finish.

Make sure shrimp are fully thawed before cooking. If using frozen shrimp, thaw them under cool running water for about 5 minutes. You can substitute canned chickpeas or cannellini beans if white beans aren't on hand. This dish also works beautifully over soft polenta or with pasta stirred in at the end.
