Shrimp Scampi with Garlic Butter Toast

Ingredients

  • 1 poundlarge shrimp (peeled and deveined)
  • 4 tablespoonbutter
  • 6 clovesgarlic
  • ½ cupdry white wine
  • 1lemon
  • ¼ teaspoonred pepper flakes
  • ½ teaspoonkosher salt
  • ¼ teaspoonblack pepper
  • ¼ cupItalian parsley
  • 1 loafcrusty bread

Method

    Slice the bread on a diagonal into 1/2-inch-thick pieces. Arrange on a baking sheet and toast at 400°F for 5 minutes until golden and crisp.

    While bread toasts, mince 6 garlic cloves.

    Melt 2 tablespoons butter in a large skillet over medium-high heat. Add garlic and red pepper flakes, cook for 30 seconds until fragrant.

    Add shrimp to the skillet in a single layer. Sprinkle with salt and pepper. Cook for 2 minutes until starting to turn pink, then flip and cook another 1 to 2 minutes until opaque throughout. Transfer shrimp to a plate.

    Pour wine into the same skillet and simmer for 2 minutes to reduce slightly. Juice the lemon and add juice to the pan.

    Remove from heat and stir in the remaining 2 tablespoons butter until melted. Return shrimp to the skillet and toss gently. Taste and adjust salt and pepper.

    Rub the toasted bread with the remaining 1 tablespoon minced garlic if desired. Divide shrimp and sauce among bowls, scatter parsley over top, and serve with garlic toast for dunking.

Spice Tips

For more heat, increase red pepper flakes to 1/2 teaspoon or add a pinch of cayenne. A splash of hot sauce stirred in at the end adds depth. Fresh basil works as well as parsley if you prefer.

Make-ahead: peel and devein shrimp up to 4 hours ahead and store in the refrigerator. You can also mince the garlic and juice the lemon before you start cooking.
