Shrimp with Charred Citrus and Crispy Garlic

Ingredients

  • 1 poundshrimp (large, peeled and deveined)
  • 2lemon
  • 1lime
  • 6 clovesgarlic
  • 4 tablespoonolive oil
  • ¼ teaspoonred pepper flakes
  • ½ teaspoonsea salt
  • ¼ teaspoonblack pepper
  • ½ cupfresh parsley

Prep

    Peel and devein 1 pound large shrimp if not already done.

    Mince 6 cloves garlic.

  3. 03

    Chop 1/2 cup fresh parsley.

Method

    Pat shrimp dry with paper towels and season with 1/4 teaspoon salt and 1/8 teaspoon black pepper.

    Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Once shimmering, add minced garlic and red pepper flakes. Cook for 30 seconds until fragrant, then remove garlic to a plate.

    Increase heat to high and add shrimp to the same skillet. Cook 2 minutes per side until just opaque. Transfer to a plate.

    Halve the lemons and limes. Place them cut-side down in the hot skillet and cook undisturbed for 2–3 minutes until deeply charred and caramelized.

    Return shrimp to the skillet. Squeeze the charred citrus over the shrimp and toss gently with the remaining 2 tablespoons olive oil, crispy garlic, remaining salt, and remaining black pepper.

    Transfer to a serving dish and top with chopped parsley. Serve immediately with the charred citrus halves on the side.

Spice Tips

For more heat, increase red pepper flakes to 1/2 teaspoon or add a pinch of cayenne. For herbaceous brightness, finish with fresh basil or dill instead of—or alongside—the parsley.
