Garlic Shrimp & Quinoa Skillet with Charred Tomatoes
Ingredients

- 2 cupswater

- 1 poundlarge shrimp (peeled and deveined)
- 2 cupscherry tomatoes
- 4garlic cloves
- 3 tablespoonolive oil
- ¼ teaspoonred pepper flakes
- 1lemon
- ¼ cupfresh parsley

Peel and devein 1 pound shrimp if not pre-prepped.

Mince 4 garlic cloves.

Halve 2 cups cherry tomatoes.

Chop 1/4 cup fresh parsley.

Bring 2 cups water to a boil in a large skillet over medium-high heat. Add 1 cup quinoa and 1/2 teaspoon salt. Reduce heat to low, cover, and simmer for 15 minutes until water is absorbed and quinoa is fluffy.

While quinoa cooks, heat 3 tablespoons olive oil in a separate large skillet over medium-high heat. Add minced garlic and red pepper flakes, stirring constantly for 30 seconds until fragrant.

Add shrimp to the skillet in a single layer. Cook for 2 minutes without stirring, then flip and cook 1 minute more until just opaque.

Add cherry tomatoes to the skillet. Let them cook for 2–3 minutes, shaking the pan occasionally, until they start to char and blister.

Fluff the cooked quinoa with a fork and stir it into the shrimp skillet. Squeeze in juice from 1 lemon. Taste and adjust salt and pepper. Top with fresh parsley and serve immediately.
Spice Tips
For deeper heat, increase red pepper flakes to 1/2 teaspoon or add a pinch of cayenne. A splash of hot sauce or sriracha stirred in at the end adds bright spice and tang.
