Garlic Fried Rice with Broccoli and Egg

Ingredients

  • 2 tablespoonvegetable oil
  • 2egg
  • 4 clovegarlic
  • 3 cupbroccoli florets
  • 3 cupcooked rice (day-old or cooled)
  • 3 tablespoonsoy sauce
  • 1 teaspoonsesame oil
  • ·salt
  • ·black pepper

    Mince 4 cloves garlic.

    Cut broccoli into bite-sized florets (about 3 cups).

Method

    Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add broccoli florets and cook for 4–5 minutes, stirring occasionally, until tender-crisp and lightly charred. Transfer to a plate.

    Add remaining 1 tablespoon oil to the pan. Crack eggs into the pan and scramble until cooked through, about 2 minutes. Break into bite-sized pieces and transfer to the plate with broccoli.

    Add minced garlic to the pan and cook for 30 seconds until fragrant.

    Add rice, breaking up clumps with a spatula or wooden spoon. Stir-fry for 3–4 minutes, allowing the rice to heat through and lightly toast.

    Pour soy sauce and sesame oil over the rice. Toss everything together. Return broccoli and egg to the pan and stir to combine.

    Season with salt and black pepper to taste. Serve immediately.

Spice Tips

For a little heat, add 1/4 teaspoon white pepper or a pinch of cayenne with the garlic. A splash of rice vinegar or a squeeze of lime brightens the finish. For depth, drizzle a touch more sesame oil at the table.

Day-old or freshly cooked and cooled rice works best for fried rice; hot rice tends to clump. If you only have warm rice, spread it on a plate to cool first.
