Crispy Garlic Ricotta Toast with Honey Drizzle

- ·bread (crusty, day-old or lightly toasted)

Mince or thinly slice 4 garlic cloves.

Cut 1 lemon in half.

Heat 2 tablespoons olive oil in a small skillet over medium heat. Add the garlic cloves and cook, stirring occasionally, for 3–4 minutes until golden and fragrant. Remove from heat and let cool slightly.

Slice the bread into 1/2-inch-thick pieces. Brush both sides lightly with the remaining 1 tablespoon olive oil and arrange on a baking sheet.

Broil the bread 4–5 inches from the heat for 2–3 minutes per side until golden and crispy. Watch carefully so it doesn't burn.

Spread a generous spoonful of ricotta onto each warm toast. Top with a garlic clove and a drizzle of the garlic-infused oil from the skillet.

Drizzle with honey, sprinkle with red pepper flakes, salt, and a crack of black pepper. Finish with a squeeze of fresh lemon juice.

Spice Tips
For deeper savory notes, add a pinch of smoked paprika under the honey. If you like heat, double the red pepper flakes or add a small pinch of cayenne. A scatter of fresh thyme or basil just before serving adds herbaceous brightness.
Ricotta should be at room temperature for the smoothest spreading. If your ricotta is cold, let it sit out for 10 minutes. You can make this with any good crusty bread—sourdough, ciabatta, or focaccia all work beautifully.
