Sheet Pan Salmon with Crispy Potatoes and Herbs
Ingredients
- 4 fillets (6 ounces each)salmon fillets (skin-on)
- 1½ poundsbaby potatoes
- 3 tablespoonsolive oil
- 1lemon
- 3 clovesgarlic
- 2 teaspoonsfresh thyme

Mince 3 cloves garlic.

Halve or quarter baby potatoes if they're large; leave smaller ones whole.

Preheat oven to 425°F.

Toss baby potatoes with 2 tablespoons olive oil, half the minced garlic, 1 teaspoon thyme, salt, and pepper. Spread on a sheet pan and roast for 15 minutes until they begin to soften.

Push potatoes to the sides of the pan. Nestle salmon fillets skin-side down in the center. Brush with remaining 1 tablespoon oil and season with salt, pepper, remaining garlic, and remaining thyme.

Roast for 10 to 12 minutes until salmon is opaque and flakes easily with a fork (internal temperature 145°F).

Slice lemon into wedges and scatter over the pan. Serve immediately.
Spice Tips
If you like heat, sprinkle the salmon with a pinch of red pepper flakes before roasting. For brightness, add 1 teaspoon of fresh dill or a splash of white wine vinegar over the finished dish.
