Crispy Salmon with Creamed Spinach and Garlic Toast

Ingredients

  • 4 fillets (6 ounces each)salmon fillets (skin-on)
  • 10 ouncesfresh spinach
  • ½ cupheavy cream
  • 4 clovesgarlic
  • 4 sliceswhole grain bread
  • 4 tablespoonsbutter
  • 1lemon

Prep

    Mince 4 garlic cloves and mix with 2 tablespoons softened butter to make garlic butter.

    Juice 1 lemon into a small bowl.

    Preheat your oven to 400°F.

    Pat the salmon fillets dry with paper towels and season both sides with salt and pepper.

    Heat 2 tablespoons butter in a large skillet over medium-high heat. Once foaming, place salmon skin-side up and cook for 3 to 4 minutes until the skin is crispy and golden. Transfer the skillet to the oven and bake for 8 to 10 minutes until the flesh is opaque and flakes easily.

    While the salmon bakes, melt 2 tablespoons butter in another skillet over medium heat. Add the spinach in batches, stirring until wilted, about 5 minutes total.

    Pour in the heavy cream and season the spinach with salt, pepper, and a pinch of nutmeg. Simmer for 2 minutes until creamy and glossy. Taste and adjust seasoning.

    Spread the garlic butter on the bread slices and toast in the oven alongside the salmon for the last 3 to 4 minutes until golden and crispy.

    Plate each salmon fillet over the creamed spinach, add a slice of garlic toast on the side, and squeeze fresh lemon juice over everything before serving.

Spice Tips

For a subtle warmth, add a pinch of red pepper flakes to the creamed spinach. A few turns of fresh black pepper or a whisper of garlic powder in the garlic butter deepens the toasty flavor without overwhelming the delicate salmon.

This dish comes together in under 30 minutes. For a lighter version, substitute crème fraîche or Greek yogurt for the heavy cream. Leftovers can be gently reheated in a low oven.
