Pan-Seared Salmon with Garlicky Wilted Spinach and Lemon
Ingredients

- 4 cupsfresh spinach
- 3 clovesgarlic
- 3 tablespoonsolive oil
- 1 wholelemon

Mince 3 garlic cloves.

Cut 1 lemon into wedges.

Heat 1 1/2 tablespoons olive oil in a large skillet over medium-high heat until shimmering, about 1 minute.

Place salmon fillets skin-side up in the pan and cook for 4 minutes until the skin is crispy and golden. Flip and cook skin-side down for another 2 to 3 minutes until the fish flakes easily with a fork. Season with salt and pepper. Transfer to a plate.

Add the remaining 1 1/2 tablespoons oil to the same skillet over medium heat. Add minced garlic and cook for 30 seconds until fragrant.

Add spinach in batches, stirring occasionally, until completely wilted, about 2 to 3 minutes. Season with salt and pepper to taste.

Divide spinach between plates, top with salmon fillets, and squeeze fresh lemon over everything. Serve immediately.
Spice Tips
For warmth without heat, add 1/4 teaspoon smoked paprika to the garlic before the spinach. A pinch of red pepper flakes brings subtle kick. Fresh dill or tarragon scattered over the finished dish adds herbal brightness.
Salmon cooks fast, so don't walk away from the stove. If your spinach is very fresh and tender, you can reduce wilting time. For added richness, finish with a knob of butter stirred into the spinach.
