Charred Corn & Shrimp with Garlic Butter Toast

Ingredients

  • 1 poundshrimp (large, peeled and deveined)
  • 4 earcorn
  • 4 tablespoonbutter
  • 4 clovegarlic
  • 4 thick slicescrusty bread
  • 1 mediumyellow onion

Prep

    Peel and devein 1 pound large shrimp.

    Mince 4 cloves garlic.

    Slice 1 medium yellow onion into thin wedges.

    Roughly chop a small handful of fresh parsley for garnish.

Method

    Heat a large cast-iron skillet or grill pan over medium-high heat until very hot.

    Place corn directly on the hot skillet. Char, turning occasionally, for 8–10 minutes until kernels are golden and blistered. Transfer to a cutting board.

    Once cool enough to handle, cut corn kernels off the cob with a sharp knife; discard cobs.

    In the same skillet, melt 1 tablespoon butter over medium-high heat. Add onion and sauté until softened and golden, about 4 minutes. Season with a pinch of salt and pepper. Push to the side.

    Add the shrimp to the skillet in a single layer. Cook without stirring for 2 minutes until the bottoms are pink, then flip and cook another 1–2 minutes until fully opaque. Season with salt, pepper, and a small pinch of red pepper flakes.

    Stir in the charred corn, then remove the skillet from heat. Mash 3 cloves garlic into the remaining 3 tablespoons butter and stir into the shrimp and corn until melted and glossy.

    Toast the bread slices until golden. Rub each one with the cut side of the remaining clove of garlic.

    Divide the shrimp and corn onto serving plates alongside the toast. Drizzle any pan juices over the top and scatter with fresh parsley.

Spice Tips

For deeper warmth, increase red pepper flakes to 1/4 teaspoon or add a pinch of smoked paprika to the shrimp. A squeeze of fresh lemon brightens the finish without overwhelming the corn's sweetness.

This recipe shines when you char the corn hard — don't be timid with the heat. If fresh corn is unavailable, use thawed frozen corn (char it in a dry skillet first). The garlic butter toast soaks up every drop of the pan sauce, making it essential to the coziness.
